Coming soonNever cooked? Perfect. Every lesson starts from zero and builds one step at a time.
Coming soonNo pork and no alcohol in any lesson or recipe. Read our cooking disclaimer.
Coming soonMost programs say “here is a recipe, try to make it.” We teach why things work: how ingredients behave, how techniques work, how to use tools safely, and how to spot and fix mistakes.
The goal is that you can look at a recipe, or at the ingredients in your kitchen, and know what you are doing.
Two chefs ran a salad restaurant in a hot-air balloon. A storm tore it apart. It crashed into a sushi restaurant and started a fire.
They put out the fire. Then they kept working.
That is the zeal: the determination to keep going when things fall apart. Burn a dinner, learn why. Ruin a sauce, work out what happened. Start at the beginning and keep cooking.
Each lesson follows the same path: understand it, do it, then decide without instructions. Every level ends with a Zeal Examination. The course is coming with the beta.
Kitchen safety, tools and equipment, measuring, understanding recipes, basic preparation.
Knife skills, heat control, seasoning, sautéing, boiling, simmering, roasting, baking basics.
Sauces, proteins, vegetables, grains and starches, doughs, more involved techniques.
Combining techniques, adjusting recipes, troubleshooting, and cooking without a recipe.
The books work alongside the course, from the first knife to cooking without a recipe. A baking companion, The Bakehouse, follows.
At The Zeal of the Chefs, we do not teach cooking with alcoholic drinks, pork or pork products, or other ingredients that do not meet our cooking standards. When a recipe normally uses one of these, we may suggest a different option instead.
